Ingredients

Filling

  • 1 medium red onion, finely diced (about 1 1/2 cup)
  • 1 1/2 cups diced raw salmon

Tamales

  • 1 1/2 cups Masa Harina flour (about 1/2 pound)

Procedure

Dear Recipe Goldmine Friends, I've been doing a lot of cooking these past few days. That coupled with the fact that I took my kids out and played hide-and-seek with them for a couple of hours this afternoon didn't leave me much time or energy to cook anything fancy.

I decided at the last minute to make this casserole as an experiment of sorts. It actually turned out really well. I think you'll really like it too. Ingredients

  • 1 (6 ounces) can of salmon
  • About 2 cups cooked elbow macaroni noodles
  • 1 can cream mushroom soup
  • About 3/4 cup LOW SODIUM chicken broth
  • 1 cup celery, diced
  • 1/2 medium bell pepper, diced
  • 1/2 large onion, minced
  • 5 good sized garlic cloves, minced (I used a garlic press)

  • 1 large can of salmon
  • 1 long packet of soda crackers, crushed
  • 1/4 cup (1/2 stick) butter or margarine
  • Milk

  • 2 1/2 cups leftover mashed potatoes (made from about 4 medium potatoes)
  • 1 % milk, if necessary
  • 1 egg white, beaten

Procedure

Preheat oven to 400 degrees F. Melts the margarine over medium heat in a medium saucepan. Stir in the flour and cook, stirring, for about 1 minute.
