Ingredients
- ½ cup finely chopped Fuji or Gala apple
- 2 packets natural no-calorie sweetener
- ¼ teaspoon cinnamon
- ¼ cup (about 2 large) egg whites
- ¼ cup unsweetened applesauce
- ¼ cup oat bran
- 1 tablespoon whole-wheat flour
- ½ teaspoon baking powder
- ⅛ teaspoon vanilla extract
- Dash salt
- ½ ounce (about 2 tablespoons) sliced and chopped almonds
Method
- Place apple in a medium microwave-safe bowl sprayed with nonstick spray. Sprinkle with 1 sweetener packet and ⅛ teaspoon cinnamon, and stir to coat.
- Cover and microwave for 1 minute, until apple has softened.
- To make the pancake batter, in a medium bowl, combine egg whites, applesauce, oat bran, flour, baking powder, vanilla extract, and salt. Add remaining sweetener packet and ⅛ teaspoon cinnamon. Mix until uniform.
- Add half of the apple mixture (about 2½ tablespoons) and half of the almonds (about 1 tablespoon) to the batter.
- Bring a skillet sprayed with nonstick spray to medium heat. Add half of the batter to form a large pancake. Cook until it begins to bubble and is solid enough to flip, 1 to 2 minutes.
- Gently flip, and cook until both sides are lightly browned and inside is cooked through, about 1 minute.
- Plate your pancake. Remove skillet from heat, re-spray, and return to medium heat. Repeat with remaining batter to make a second pancake. 8. Top pancakes with remaining apple mixture and almonds.
