Ingredients
- ½ cup old-fashioned oats
- ¼ teaspoon cinnamon
- ⅛ teaspoon vanilla extract
- ⅛ teaspoon coconut extract
- Dash salt
- 1 cup unsweetened vanilla almond milk
- 1 packet natural no-calorie sweetener
- ¼ cup chopped pineapple
- ¼ cup halved grapes
- 1 tablespoon unsweetened shredded coconut
Methods
- In a nonstick pot, combine oats, cinnamon, vanilla extract, coconut extract, and salt.
- Add almond milk and 1 cup water. Bring to a boil, and then reduce to a simmer.
- Cook and stir until thick and creamy, 12 to 15 minutes.
- Transfer to a medium bowl, and stir in sweetener. Let cool until thickened, 5 to 10 minutes.
- Top with fruit and coconut.
